Not so crispy sisig

In my Good Eats post, I had listed that for me the Best Crispy Sisig could be eaten at Gerry’s Grill. I had struck it out from the list later on in the part 2 of that post. The reason being, I was disappointed a few weeks ago with the sisig that I had eaten at Gerry’s Grill @ Blue Wave. The sisig they served was first of all - not sizzling - and second it wasn’t crispy at all. The chicharon bits sprinkled on top were more “makunat” (tough) than crispy. The pork half-cooked by the hot plate so it turned out really “malansa” (term used for fish smell). The experience was so bad for me that I swore to take it off my Good Eats list and so I did.

Yesterday, a it was the last day of one of the members of my team so they decided to have a farewell lunch at none other than Gerry’s Grill (@Insular Life). I wasn’t the one paying so it was not my choice. Of course we ordered the sisig (among others). I waited in anticipation if I would be in the same ordeal. We ordered crispy sisig, grilled squid, baked tahong, molo soup and sizzling kangkong. Ok, so the sisig was crispy but it was just not enough to make up for the past so it remains deleted from my list and that category open for another great eating encounter.

    ChrisH, they have a branch in West Gate, Alabang near UCC Coffee, Hula Hula and The French Corner. The sisig is 90% crispy balat ng baboy. It’s good but take it in moderation.

    Have you tried Jay-j’s sisig? It’s pretty good. Sad to say Gerry’s sisig also disappointed me once and swore it off.

    Where is Jay-J’s sisig? Maybe I could try that since I am now on the lookout for a replacement for my Gerry’s craving.

    Had the same experience as yours. My date and I ordered sisig and grilled squid at gerry’s baguio. after serving, we noticed that the sisig is makunat and the squid is not freshly cooked (was just reheated).I think that’s the problem with gerry’s grill. They’re not very consistent with how they prepare and serve their sisig and other menu.
    btw: My first time eating at gerry’s was at their branch at libis. Food there was great including sisig and grilled seafoods.

    martin - My favorite gerry’s is the one at park square/glorietta. It is the same with other dining establishments who cannot handle expansion or even franchising. There is always the danger that the others cannot maintain the standard set by the original place.
