Making crispy chicken fingers

Breaded chicken fillets, chicken fingers, crispy chicken fingers. They all sound the same to me. Yaya used to make these a lot especially when there was not enough time to concoct some fancy dinner for the family. Its quick, easy and tasty. Pair it up with some mushroom gravy or even just plain ketchup and you’re in fastfood heaven.

Now our version of fried chicken fillets used to consist of chicken pieces coated in eggs and flour. Somehow it never turned out quite as crispy as those that I have when I order them from Friday’s or Chili’s. Mostly they turn soft and soggy although still tasty.

Then I saw a recipe in Yummy magazine that featured easy to prepare children’s meals. The recipe used corn flakes as breading for the chicken fillets. Apparently this trick is what makes it crispy. So we tried it at home and indeed it was as I had imagined it to be and more. Since the corn flakes we bought were frosted, there was an additional ummph in the flavor of the chicken pieces. My kids love it and I actually feel like a kid eating it. I would like to share to you just how easy it is to make this..

Ingredients:
1/2 kilo chicken breast fillets (or you can use thigh fillets)
1 pack of Kelloggs frosted cornflakes
1 cup of milk
1 egg, beaten
salt and pepper

Procedure:
Cut the fillets into 1 and a half inch pieces. Rub some salt and pepper for seasoning. Combine the egg with the milk and mix well. Put a lot of vegetable oil in a frying pan and put on high heat. Dip the seasoned chicken fingers in the milk and egg mixture then cover with corn flakes. Place in frying pan and cook until golden brown. Take the chicken out of the oil and place on paper towels so that it can absorb the excess oil. Serve with steaming white rice or garlic mashed potatoes. Enjoy plain or with gravy (I think ketchup totally destroys the flavor).

    Thats an interesting ingredient to use (cornflakes) I’ll try this since my kids love crispy chicken fillet but Ive always used breadcrumbs for it. =) Thanks!

    G_mirage - I thought so too when I first heard read about it. But I have always wondered why I can never make breaded meat crispy enough. Try it and you will see that it works!

    Thanks for this recipe! Should the cornflakes be crushed/ground? I rarely cook but this recipe looks simple enough. :)

    Krissy - Do not “crush” the cornflakes as they will lose some of the crispness. I suggest just ground them a bit so the flakes are not too large but still be crispy.
